Corrado Assenza can be found in the Caffè Sicilia, located in the
beautiful town of Noto, surrounded by the perfumes of the Sicilian
countryside from which he draws the inspiration to cook his highly
prized creations. Chef Assenza is now the producer and inventor of
Caffe’ Sicilia’s exquisite jams and sweets and has been touted as the
most daring experimenter to use strong sweet and savory elements of
Sicilian cooking in his creations. He is known as an alchemist of nature
who works with rare raw materials, cooking fascinating recipes with
which he tries to transmit the emotions of a baroque land, an expression
he loves to use when describing his homeland.
Corrado Assenza’s humble beginnings started with him as a child in old Caffe’ Sicilia which his aunt managed and he later succe
eded
as head of the business. There, he continued to play around with
pastry, cream, fruit and a wide variety of aroma, developing an amazing
relation to the raw materials that he worked with, which enabled him to
understand what it took to get the best results he sought in his end
product. Considered one of the most important creative individuals from
the south of Sicily, he is both close to tradition and tenacious when it
comes to the exhausting progress of technique. |
